Vegan Pasta

Plant based Pasta Girasoli

Ingredients (2 portions)
- 1 package (250 grams) of Vegan GIRASOLI (I found it in ICA) or any other vegan tortilini.
- 2 Handfuls of black/green kale
- Handful of cocktail tomatoes (approx 10)
- half a cucumber
- half a red onion
- 50 grams vegan feta cheese
- 2 table spoons of pine nuts
- Handful of arugula salad
- olive oil
- olive oil with lemon taste (optional)
- balsamico
- Salt, pepper, chili flakes
How to
- Chop all the vegetables and put aside
- Roast the pine nuts in a dry pan
- In a pan, fry the kale in some olive oil (preferably with lemon taste) til soft
- Boil the pasta in very salty water (time: according to the instructions on the package)
- When the pasta is done, add it in the bottom of the plates, add some olive oil and top with all the ingredients.
