Plant based Coconut Soup

  • Cooking time: less than 45 minutes

Ingredients (2 portions)

  • 250 ml coconut milk
  • 100-200 ml of water
  • handful of kale of your choice
  • 100 grams of raw tofu
  • 1 big carrot
  • 1 small yellow onion
  • half a red chili
  • 1 garlic clove
  • juice from half a lime
  • 1 table spoon of chopped ginger
  • 2 table spoons of soy sauce
  • 1 teaspoon of red chili paste (or add more red chili)
  • 1 - 2 portions of rice noodles (depending on how hungry you are)
  • 2 table spoons of sesame seeds

How to

  1. Chop all the vegetables and put everything (except the noodles and sesame seeds) into a pot. Let boil on low temperature for about 20-30 minutes.
  2. Roast the sesame seeds in a dry pan till golden.
  3. Break the rice noodles and ad to the pot after 30 minutes. Let boil on low temperature for another 10 minutes. 
  4. Add to plates and top with the sesame seeds.
