Plant based Coconut Soup

- Cooking time: less than 45 minutes

Ingredients (2 portions)
- 250 ml coconut milk
- 100-200 ml of water
- handful of kale of your choice
- 100 grams of raw tofu
- 1 big carrot
- 1 small yellow onion
- half a red chili
- 1 garlic clove
- juice from half a lime
- 1 table spoon of chopped ginger
- 2 table spoons of soy sauce
- 1 teaspoon of red chili paste (or add more red chili)
- 1 - 2 portions of rice noodles (depending on how hungry you are)
- 2 table spoons of sesame seeds
How to
- Chop all the vegetables and put everything (except the noodles and sesame seeds) into a pot. Let boil on low temperature for about 20-30 minutes.
- Roast the sesame seeds in a dry pan till golden.
- Break the rice noodles and ad to the pot after 30 minutes. Let boil on low temperature for another 10 minutes.
- Add to plates and top with the sesame seeds.
